10-Minute Buddha Bowl – Kesäinen Kulho

I’ve only recently started making buddha bowls, dragon bowls etc at home! So I wanted share one of my favorite creations with you today. Perfect for dinner and the leftovers for lunch. I prefer to have a light breakfast, then a heavier lunch and again a light dinner so something like this works perfectly in the evening. Avocado Egg Butter

A very traditional dish here in Finland is a Karelian Pie, often served with something roughly translated as ‘egg butter‘. Basically a butter mixed with boiled eggs. However if you wish to eat dairy free that is off limits. My mom recently discovered a recipe where somebody had substituted the butter with avocado.
